M-001 is the more refined, sweet and low-bitterness matcha. It has a named cultivar—Okumidori—a clearly stated Kagoshima origin, a higher internal grade and a stronger emphasis on smooth ceremonial drinking.

M-002 is the more savoury, grounded and assertive matcha. It still has strong umami and low bitterness, but it has less sweetness, a slightly duller colour score and more noticeable vegetal or refreshing bitter characteristics. This makes it easier to position as the bolder of the two, particularly for milk-based drinks.
