What is Ceremonial grade matcha?

These grades are often a tool used to describe and advertise matcha within Europe or America. These terms are associated with different quality matcha. At matcha studio we have tried to step away from this approach of grading matcha as a main point selling point. All matcha at matcha studio is currently either premium or ceremonial grade from our supplier in Japan however we have made it very key to describe the matcha based on the notes and undertones rather than the quality to help people find the best that suits them. 

Matcha comes in 3 different grades, culinary often describes Matcha that is not suitable for lattes. Often this matcha does not have the vibrant green you’d normally get with premium and ceremonial lattes. However due to the nature of the bitterness and astringency it’s great for cooking as you can balance these tones with sugar and cooking process to be with grassy matcha flavour in baked goods.

Premium Matcha is matcha that has similar qualities to ceremonial but a few missed steps in the cultivation process as well as it’s commonly the second flush of matcha farming. Premium Matcha is a great balance in quality for lattes as well as lower costs compare to ceremonial. 

Ceremonial grade matcha is one of the highest quality matcha available. It’s often the first flush of the harvest, where pickers take the first 3 leaves of the steam. It’s grown to be enjoyed with nothing added therefore it’s important that there is no astringency or bitterness to be able to enjoy easily. 

Our M-001 matcha is classified as a ceremonial grade by our supplier and has amazing floral and grassy tones, while our M-002 matcha is a premium matcha that is perfect for lattes and added flavours. Both matcha powders offer us something new and both can be enjoyed equally.
